RECIPE - Advanced Culture
There is an easier and quicker way to make LACTO with only 4 ingredients, 3 tools, 4 steps in 5 days!
We can make LACTO with better taste and less mistakes on this advanced culture.
Pour out 750ml of water from the bottle, and put all ingredients in that same bottle. Shake it well, scratching the surface of the rice. Pour the other 750ml of water back into the bottle.

When the bottle is filled up to the top. shake the bottle well.
(Finish the process on 1st day)
When you feel a very sour taste around the 5th day, acid by LAB has been produced. This means LACTO is ready to use!!
You can also check the acid level with a pH paper strip. When acid level is under pH3.6 LACTO process is done!
Preserve LACTO in a cool place and under the shade, or in the fridge.

We use only 3 tools for the Advanced Culture.
Scale or messuring spoon, Funnel, Plastic Bottle.
If you have a bowl and a strainer, you can use them as well.
We always use the same 4 ingredients. We can use less amount of brown rice than in the Basic Culture!
This ingredients are for 1.5 L of LACTO.
Organic Brown Rice 150g, Organic Sea Salt 15g,
Organic Brown Sugar 45g, Mineral Water 1500ml.
We select good ingredients and cleen tools.
Check the rice and take out the worm-eaten rice.
After the 3rd day, you can check the smell and taste. LACTO should be sparkling and have less color around the 4-5th day.
From 2nd day, release the gas and shake the bottle well 2 - 3 times per day until the process is finished. Keep the bottle standing and under the shade, at 20-30 degree C.
